Visit the "Foodways" exhibition and hear Poppy Tooker, native New Orleanian and champion of heritage foodways, discuss the traditions and heritage foods of Louisiana’s tables. Dan Causgrove, chef of the Windsor Court Hotel’s Grill Room, will provide a cooking demonstration that traces the influences of the natural environment on one of the most well-known New Orleans dishes: Cajun gumbo
